Salmon, Kale, Ricotta and Egg Fry-pan Cake
Smoked salmon and ricotta are rich and full of good fats, so they can be eaten in small quantities in order to reap the benefits. Kale is, of course, full of minerals and fiber, and eggs are our protein savior.
Serves: 6 slices
Container: you can store all 6 slices in one container and take them out as you need them, or use 6 small containers if you are transporting the slices to work Time: approximately 15 minutes

Ingredients:
- 5 eggs, lightly beaten
- 4 oz. ricotta cheese
- 2 cups kale, finely sliced
- Salt and pepper, to taste
- 2 oz. smoked salmon, cut into small pieces
Method:
- Place the eggs, ricotta, kale, salt and pepper into a bowl and whisk to combine.
- Drizzle some olive oil into a non-stick fry pan and place over a medium heat.
- Pour the egg mixture into the frying pan and sprinkle the smoked salmon pieces over the top.
- Cook for approximately 7 minutes or until just set.
- Leave to cool before slicing into 6 pieces and storing in the fridge until needed!
