1 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
1 1/2 c. water
3 egg yolks
2 tbsp. butter
1/3 c. lemon juice
1 1/2 tsp. grated lemon rind
MERINGUE:
3 egg whites 6 tbsp. sugar
FOR PIE: Combine 1/2 cup sugar, cornstarch and salt in double boiler, gradually blend in water and stir constantly until thickened. Beat together egg yolks, 1/2 cup sugar and a little hot mixture; then stir all into remaining hot mixture. Cook over double boiler 2 minutes, stirring constantly. Remove and add butter, lemon juice and lemon rind. Cool and pour into 9 inch baked pie shell. MERINGUE: Beat egg whites until foamy. Add sugar, 1 tablespoon at a time, beating after each addition until stiff. Spread over top of pie. Sprinkle shredded coconut over top and bake at 425 degrees for 5 minutes.
