1 1/2 c. plus 2 tbsp. sugar
2 c. flour
2 1/2 tsp. cinnamon
1 (4 oz.) shredded coconut
1 (8 oz.) can crushed pineapple
1 tsp. baking soda
1 1/4 c. oil
1/2 tsp. salt
4 eggs
Combine all ingredients in a large bowl. Blend with electric mixer at low speed until ingredients are combined. Turn mixer to medium speed; beat until smooth. Pour in greased and floured pan. Bake about 45 minutes in preheated 350 degree oven. Use a cake pan that has lid for storage.
ICING:
2/3 stick butter
1 lb. powdered sugar
1 c. chopped pecans (or other nuts)
1 (8 oz.) cream cheese
2 tsp. vanilla
Whip butter and cream cheese together. Add other ingredients and beat well.
