Super Green Soup

For the soup;

(makes 2 large portions)

1 x Onion

1 x Leek

1 x Stick Celery

1 x Courgette

Half a head of broccoli

Handful of kale

Handful of spinach

Extra Virgin Olive Oil

Salt and Pepper

WHY

Much the same as with juicing ...the green soup isn't as flavoursome as the other options on the menu but its SO super good for you, you need this alkaline miracle in your life!

MAKE IT

Warm a splash of extra virgin olive oil in a pan, add the chopped celery, red onion and leek and cook gently until soft.

Add the courgette, chopped broccoli and handful of kale plus some salt and pepper and 500ml of water.

Gently simmer everything for 30 minutes. The water may not completely cover the veg but these vegetables contain so much water that once cooked they will soften enough to nicely fill the pan. Add a handful of spinach towards the end of your simmer time. Spinach needs very little time to cook and turns more acidic the longer its heated.

Carefully pour into a blender and blend until smooth. Blend the lot and serve sprinkled with black pepper.
