Cauliflower is an adaptable vegetable that can be eaten on the keto diet in numerous plans—like this rich soup. Cauliflower is a superb wellspring of nutrients C and K, omega-3 unsaturated fats, and manganese, which can assist with supporting assimilation, further develop mind work, and advance a solid heart. Pick a blanketed white head of cauliflower with fresh green leaves and definitely no earthy-colored spots.

¼ cup margarine

½ sweet onion, cleaved

1 head cauliflower, cleaved

4 cups Herbed Chicken Stock

½ teaspoon ground nutmeg

1 cup weighty (whipping) cream Sea salt

Newly ground dark pepper

1 cup destroyed cheddar

  1. Put an enormous stockpot over medium warmth and add margarine.
  2. Sauté the onion and cauliflower until delicate and gently cooked, around 10 minutes.
  3. Add the chicken stock and nutmeg to the pot and heat the fluid to the point of boiling.
  4. Reduce the warmth to low and stew until the vegetables are extremely delicate, around 15 minutes.
  5. Remove the pot from the warmth, mix in the substantial cream, and purée the soup with a drenching blender or food processor until smooth.
  6. Season the soup with salt and pepper and serve finished off with the cheddar.
