INGREDIENTS

 ¼ cup olive oil

 1 large onion, chopped

 1 cup tomatoes, diced

 1 cup cabbage, fined sliced

 ½ cup finely chopped leek

 ½ cup finely chopped carrot

 1 clove chopped garlic

 2 teaspoons Italian seasoning (Check Shopping Guide report for this)

 ½ teaspoon freshly ground pepper

 2 cups vegetable broth or chicken broth

 2 cups can beans (rinsed) or boiled beans

 3 cups spinach or green or waterleaves

 ½ cup cheese (optional)
