Bircher Muesli with Apple and Cinnamon

Oats and grated apple, soaked in yoghurt and milk overnight, with a hint of warming cinnamon. This is a very simplified recipe, as I find that a less “busy” bircher in the morning is best. However, you can add extra nuts and seeds if you wish, just remember that it will change the nutritional information.

Serves: 4 prepped servings

Container: 4 small containers or small bowls or ramekins

Time: approximately 10 minutes

Ingredients:

  • 1 ½ cups wholegrain rolled oats
  • 2 apples, skin on, grated
  • 1 tsp. ground cinnamon
  • 1 cup almond milk (or any other milk you prefer)
  • 1 cup plain, unsweetened yogurt

Method:

  1. Place the oats, grated apple, cinnamon, milk, and yogurt into a bowl and stir to combine. The mixture should be wet and reasonably thick, but it will depend on the brand of yogurt you use. If your mixture seems a bit too dry or too thick, add a bit more milk, or even some water if you don’t want to change the calorie count.
  2. Divide the mixture into your four containers or bowls, cover, and place in the fridge.
  3. In the morning, simply grab it from the fridge and eat with a spoon! You’ll love this cold, filling, and refreshing breakfast.
