Toasted Granola Packs (to take to work)

On mornings when you have no time to eat breakfast at home, or you’re not quite ready to eat yet, a portable pack of granola is the handiest option. Throw it in your bag and use the milk at your work (or take a little bottle of milk with you). And I’ll admit, sometimes I like to snack on this granola dry, almost like a trail mix! Seeds provide healthy fats, and oats provide slow-release energy.

Serves: 7 packs (1 serving per pack)

Container: 7 small airtight containers or sealable bags

Time: approximately 15 minutes

  • Calories: 261
  • Fat: 11 grams
  • Protein: 12 grams
  • Carbs: 33 grams

Ingredients:

  • 2 tbsp. coconut oil
  • 3 cups wholegrain rolled oats
  • 4 tbsp. shredded coconut
  • 3 tbsp. flaxseeds
  • 3 tbsp. pumpkin seeds
  • 3 tbsp. sunflower seeds
  • 3 tbsp. chia seeds
  • 10 dried apricots, chopped into small pieces
  • 1 tsp. cinnamon
  • ¼ tsp. sea salt

Method:

  1. Heat the coconut oil in a large pan or pot over a medium heat.
  2. Add the oats, coconut, flaxseeds, pumpkin seeds, sunflower seeds, chia seeds, dried apricots, cinnamon, and sea salt, stir to combine.
  3. Keep stirring the mixture as it gently toasts for about 7 minutes or until golden and aromatic (it will smell like fresh baking!).
  4. Leave in the pan to cool before filling your 7 bags or containers.
  5. Store in the pantry.
