Peanut Butter and Banana Breakfast Cake

Do not panic, this is not a “cake” in the sense we usually think of cakes! As much as I would love to offer a regular cake for breakfast, it doesn’t really help the weight loss cause. This “cake” contains bananas, peanut butter, eggs, almond flour and almond milk – healthy and nutritious ingredients full of energy, fat and protein. You can freeze slices of this and pull them out when you’re in a pinch.

Serves: 8 slices (1 serving per slice)

Container: 1 large container or 8 single-serve containers if transporting to work

Time: approximately 20 minutes

  • Calories: 200
  • Fat: 12 grams
  • Protein: 7 grams
  • Carbs: 16 grams

Ingredients:

  • 3 bananas, mashed
  • 4 tbsp. natural peanut butter (crunchy or smooth, either one is fine)
  • 3 eggs
  • 1  cup  almond  flour  (this  can  be  expensive  so  simply  use  whole-meal flour if you like)
  • 1 cup (8fl oz.) almond milk
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract

Method:

  1. Preheat the oven to 356 degrees Fahrenheit and prepare a baking dish by lining with baking paper.
  2. Place the bananas, peanut butter, eggs, almond flour, almond milk, baking powder and vanilla extract into a bowl and stir to combine.
  3. Pour the mixture into the prepared baking dish and place into the oven, bake for approximately 15 minutes or until just set.
  4. Leave to cool before slicing into 8 pieces and storing in an airtight container in the fridge.
  5. Eat hot or cold!
