Blueberry and mint parfaits

Blueberries are full of antioxidants and healthy carbs. Not only are they nutritious, but they are tasty and pretty (for some reason I love to eat foods that look pretty on the plate, it makes it taste yummier somehow!). Mint is invigorating and refreshing, providing a burst of color. Of course, I have to add oats to the yoghurt-base of this parfait, they are too filling and wholesome to leave out.

Serves: 4 parfaits

Container: 4 glass bowls, ramekins, cups or airtight containers if transporting the parfait to work

Time: approximately 10 minutes

Nutritional info per serving:

  • Calories: 272
  • Fat: 8 grams
  • Protein: 10 grams
  • Carbs: 25 grams

Ingredients:

  • 1 ½ cups wholegrain rolled oats
  • 1 cup (8fl oz.) almond milk
  • 2 cups (16fl oz.) unsweetened Greek yogurt
  • 1 cup fresh blueberries (can also use frozen, no need to thaw first)
  • 4 small fresh mint leaves, finely chopped

Method:

  1. Place the oats and almond milk into a bowl and stir together to combine (this helps the oats to soften).
  2. Spoon the oat and almond milk mixture evenly into your 4 containers.
  3. Place a drop of yogurt into each container on top of the oats (use half of the yogurt as you’ll be adding another layer of it).
  4. Divide half of the blueberries between the 4 containers and sprinkle on top of the yogurt.
  5. Add another layer of yogurt and then another layer of blueberries (you can use them all up at this stage).
  6. Sprinkle the fresh mint over the top of each parfait.
  7. Cover and place into the fridge to store until needed!
