Ingredients:

  • 12 oz. lamb steaks, cut into cubes
  • 1 tsp. ground cumin
  • Salt and pepper, to taste
  • 4 whole-meal pita breads
  • 2 cups salad greens (mixed kale, lettuce and arugula is ideal)
  • 4 tbsp. plain yogurt
  • 1 lemon, cut into quarters

Method:

  1. Drizzle some olive oil into a fry pan and place over a medium heat.
  2. Add the lamb, cumin, salt and pepper and stir to combine, sauté for about 7 minutes or until the lamb cubes are cooked but still a little pink.
  3. Make a slit in each pita bread and fill each one with mixed salad greens, lamb, and a drizzle of yogurt.
  4. Place the filled pitas into your 4 containers and place a lemon quarter in each one so you can squeeze it over the pita when you’re ready to eat!
  5. Cover the containers and store in the fridge until needed.
