Pita Pockets with Lamb and Salad
Whole-meal pita pockets with lamb and salad greens, with a drizzle of plain yoghurt. This is the kind of lunch you’ll want to eat as soon as you get to work!

Time: approximately 20 minutes

Ingredients:
- 12 oz. lamb steaks, cut into cubes
- 1 tsp. ground cumin
- Salt and pepper, to taste
- 4 whole-meal pita breads
- 2 cups salad greens (mixed kale, lettuce and arugula is ideal)
- 4 tbsp. plain yogurt
- 1 lemon, cut into quarters
Method:
- Drizzle some olive oil into a fry pan and place over a medium heat.
- Add the lamb, cumin, salt and pepper and stir to combine, sauté for about 7 minutes or until the lamb cubes are cooked but still a little pink.
- Make a slit in each pita bread and fill each one with mixed salad greens, lamb, and a drizzle of yogurt.
- Place the filled pitas into your 4 containers and place a lemon quarter in each one so you can squeeze it over the pita when you’re ready to eat!
- Cover the containers and store in the fridge until needed.
