Chakalaka Thick Spicy Vegetable sauce

Ingredients:

 

1/4 cup canola oil

 

2 Tbsp. chopped fresh ginger

 

2 Tbsp. chopped fresh garlic

 

1 Tbsp. chopped chili peppers

 

1 cup chopped onions

 

2 cups tomatoes, roughly chopped

 

1/2 cup green peppers, roughly chopped

 

1/2 red peppers, roughly chopped

 

3 1/2 Tbsp. masala

 

1 cup grated carrots

 

2 cups vegetarian baked beans, in tomato sauce

 

2 tsp. fresh coriander

 

Preparation:

 

Fry ginger, garlic, chilies, and onions in the oil. Add the leaf masala or curry powder of your choice. Add the tomatoes and cook for 10 minutes.

 

Add peppers and carrots and cook for 10 minutes.

 

Add baked beans and cook for 8 minutes.

 

Remove from heat and add coriander. Check seasoning. Serve with Bread, pap, Boerewors and pap, Boerewors Rolls, or whatever you want, hot or cold.
