Bacon & Egg Cups

Cooking Time: 4 minutes Ingredients:
• 1 tablespoon butter, melted
• 4 bacon slices
• 4 organic eggs
• 4 Gruyere cheese slices
• 2 tablespoons chopped tomato
• 1 teaspoon minced fresh cilantro
Directions:
- Arrange a trivet in the bottom of the Instant Pot and pour 1 ½ cups of water in.
- Grease four ramekins with melted butter and set aside.
- Arrange one bacon slice in each prepared ramekin.
- Carefully, crack one egg in each ramekin and top each with one cheese slice.
- Place the ramekins on top of the trivet.
- Secure the lid and place the pressure valve to the “Seal” position.
- Select “Manual” and cook under “Low Pressure” for about 4 minutes.
- Select the “Cancel” and carefully do a “Natural” release.
- Remove the lid and serve immediately with the garnishing of tomato and cilantro.
