INGREDIENTS
4 deboned chicken thighs
Salt and pepper
1 small zucchini, sliced
2 small carrots, peeled and sliced
1 small parsnip, peeled and sliced
2 cloves garlic, sliced
3 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons fresh chopped rosemary
INSTRUCTIONS
Preheat the oven to 350°F and lightly grease a small rimmed baking sheet with cooking spray.
Place the chicken thighs on the baking sheet and season with salt and pepper.
Arrange the veggies around the chicken then sprinkle with sliced garlic.
Whisk together the remaining ingredients then drizzle over the chicken and veggies.
Bake for 30 minutes then broil for 3 to 5 minutes until the skins are crisp. Makes 2 servings.
