INGREDIENTS
100 grams chopped cauliflower
1 large avocado
1 tablespoon fresh lime juice
2 tablespoons diced red onion
2 tablespoons olive oil
2 (6-ounce) boneless salmon fillets
Salt and pepper
INSTRUCTIONS
Place the cauliflower in a food processor and pulse into rice-like grains.
Grease a skillet with cooking spray and heat over medium heat.
Add the cauliflower rice and cook, covered, for 8 minutes until tender. Set aside.
Combine the avocado, lime juice and red onion in a food processor and blend smooth.
Heat the oil in a large skillet over medium-high heat.
Season the salmon with salt and pepper then add to the skillet skin-side down.
Cook for 4 to 5 minutes until seared then flip and cook for another 4 to 5 minutes.
Serve the salmon over a bed of cauliflower rice topped with the avocado cream. Makes 2 servings.
