INGREDIENTS
½ (10-ounce) bag frozen spinach, thawed
6 large eggs
2 tablespoons olive oil
½ teaspoon dried Italian seasoning
Salt and pepper
¼ cup ricotta cheese
¼ cup grated parmesan cheese
2 ½ ounces shredded mozzarella cheese
1 ounce sliced pepperoni
INSTRUCTIONS
Preheat the oven to 375°F and grease a pie plate with cooking spray.
Defrost the frozen spinach in the microwave for 4 minutes then squeeze out the water.
Whisk together the eggs, olive oil, Italian seasoning, salt and pepper in a bowl.
Stir in the ricotta cheese, parmesan cheese, and drained spinach until well combined.
Pour the mixture into the pie plate and top with mozzarella and pepperoni.
Bake for 35 to 40 minutes until the egg is set and the cheese lightly browned. Makes 4 servings.
