INGREDIENTS
1 tablespoon olive oil
½ cup diced yellow onion
8 ounces canned tuna
¼ cup mayonnaise
2 large eggs, whisked
2 ounces shredded mozzarella cheese
Salt and pepper
1 green onion, sliced thin
INSTRUCTIONS
Heat the oil in a skillet over medium heat.
Add the onion and cook until translucent, about 5 minutes.
Drain the tuna then flake it into the skillet and stir in the remaining ingredients.
Season with salt and pepper and cook for 2 minutes or until the cheese melts.
Spoon into a bowl and top with sliced green onion to serve. Makes 2 servings.
