Pre-Made Banana Pancakes

These pancakes do not contain any sugar, flour or butter! Bananas, eggs and ground almonds are the main ingredients. Bananas provide potassium and sweetness, eggs add the protein, and ground almonds contain healthy fats. Fry them up during your prep session, store them in the fridge, then zap them in the microwave or frying pan to heat before serving.

Serves: 15 pancakes (5 servings, 3 pancakes per serving)

Container: 1 airtight container to store all of the pancakes is ideal

 Time: approximately 25 minutes

  • Carbs: 14 grams

Ingredients:

  • 2 large bananas, peeled and cut into chunks
  • 3 eggs
  • ½ cup ground almonds
  • 1 tsp. vanilla extract
  • ½ tsp baking powder
  • Coconut oil, for frying

Method:

  1. Place the bananas, eggs, ground almonds, vanilla extract, and baking powder into a bowl and mash using a fork, handheld stick blender, or potato masher until smooth and combined.
  2. Drizzle some coconut oil into a non-stick frying pan and place over a medium heat until oil gets hot.
  3. Place scoop of pancake mixture into the hot pan and cook on both sides until golden and cooked through.
  4. Place the cooked pancakes into your airtight container and store in the fridge.
  5. Before eating the next morning, simply heat the pancakes in the microwave or on a dry, hot frying pan until heated through.
  6. Serve with yogurt and fruit, or simply eat plain!
