Spinach, Mushroom and Feta Breakfast Pies

These pies are SO light in calories, you can have them as a snack on the side of a more robust breakfast. They are a great way to get extra protein and a dose of greens in the morning. The feta cheese adds creaminess and a tart saltiness to satisfy your taste buds.

Serves: 1 large pie to be cut into 8 pieces (8 servings)

Container: store in the fridge in a large airtight container with baking paper to separate the layers of pie slices so they don’t stick together

Time: approximately 25 minutes

  • Fat: 5 grams
  • Protein: 5 grams
  • Carbs: 1 gram

Ingredients:

  • 5 eggs
  • 2 cups chopped spinach
  • 1 cup sliced mushrooms (any kind)
  • 2 oz. feta cheese, cut into small pieces, or crumbled
  • Salt and pepper, to taste

Method:

  1. Preheat the oven to 356 degrees Fahrenheit and grease a rectangular pie or casserole dish with butter.
  2. Place the eggs, spinach, mushrooms, feta, salt, and pepper into a bowl and whisk to combine.
  3. Pour the mixture into the greased dish and place into the oven to bake for about 10 minutes until just set.
  4. Leave to cool before slicing into 8 pieces and placing into an airtight container.
  5. Store in the fridge.
