Spinach, Mushroom and Feta Breakfast Pies
These pies are SO light in calories, you can have them as a snack on the side of a more robust breakfast. They are a great way to get extra protein and a dose of greens in the morning. The feta cheese adds creaminess and a tart saltiness to satisfy your taste buds.
Serves: 1 large pie to be cut into 8 pieces (8 servings)
Container: store in the fridge in a large airtight container with baking paper to separate the layers of pie slices so they don’t stick together

Ingredients:
- 5 eggs
- 2 cups chopped spinach
- 1 cup sliced mushrooms (any kind)
- 2 oz. feta cheese, cut into small pieces, or crumbled
- Salt and pepper, to taste
Method:
- Preheat the oven to 356 degrees Fahrenheit and grease a rectangular pie or casserole dish with butter.
- Place the eggs, spinach, mushrooms, feta, salt, and pepper into a bowl and whisk to combine.
- Pour the mixture into the greased dish and place into the oven to bake for about 10 minutes until just set.
- Leave to cool before slicing into 8 pieces and placing into an airtight container.
- Store in the fridge.
