Bell Pepper and Bean Burritos
These burritos are ideal for power days when you’ve got lots of exercise, work, and running around to do. Packed with fiber and protein from beans and eggs, and the sweetness of softened bell peppers. Fresh cilantro and red chili offer a hit of fresh flavor and bright color.
Serves: 4 burritos (1 burrito is 1 serving)
Container: 4 single-serve airtight containers, or 1 large one to store all 4 burritos

Ingredients:
- 2 garlic cloves, finely chopped
- 2 red bell peppers, finely sliced
- 1 tsp. paprika
- ½ tsp. chili powder
- 1 can (14 oz.) black beans, drained
- Salt and pepper, to taste
- 2 eggs, lightly beaten
- 4 small flour or corn tortillas
- Fresh cilantro, chopped
- ½ fresh red chili, finely chopped
Method:
- Drizzle some olive oil into a frying pan and place over a medium heat.
- Add the garlic, bell peppers, paprika, and chili powder, sauté until the bell peppers are soft.
- Add the black beans and a pinch of salt and pepper, stir to combine, continue to sauté.
- Push the bean and bell pepper mixture to one side of the pan and pour the lightly beaten eggs on the other side, stir them as they scramble until just cooked.
- Turn off the heat and lay your tortillas onto a board.
- Fill each tortilla with bell pepper, beans, and eggs.
- Sprinkle with cilantro and fresh chili, and tightly wrap.
- Carefully place the burritos into your container/s, cover, and place into the fridge.
