Chorizo and Sweet Potato Hash
Okay, you got me… chorizo isn’t a “weight loss” food, but it’s tasty, salty, and full of flavor to satisfy you throughout the morning. A little bit of chorizo sausage is not going to sabotage your weight-loss goals, so go ahead and enjoy it! Sweet potato provides fiber and good carbs, and eggs provide that ever- important protein. Slice this hash into 4 pieces, store them away in the fridge, and eat hot or cold for a tasty, savory breakfast.

Ingredients:
- 3 cups sweet potato, cubed (about 2 large sweet potatoes)
- 1 chorizo sausage, sliced
- 1 cup spinach leaves, chopped
- 3 eggs, lightly beaten
Method:
- Place the sweet potatoes into a pot and cover with water, place over a medium heat until boiling. Leave to simmer, uncovered, until the sweet potatoes are soft but not mushy.
- Drizzle some olive oil into a non-stick frying pan and place over a medium heat.
- Place the chorizo into the hot frying pan and sauté for a few minutes until crispy and the oil has melted out.
- Place the sweet potatoes into the frying pan and stir them as they sauté for a few minutes; it’s okay if you crush them a bit.
- Add the spinach to the pan and stir into the sweet potatoes and chorizo until wilted.
- Pour the egg over top of the sweet potato mixture and allow it to seep through the potatoes, make little holes with a wooden spoon to let the egg combine with the other ingredients if you need to.
- Cook the hash for a few minutes or until the egg has just set.
- Cut into 4 pieces and either store in one large container, or in 4 single-serve containers.
- Place into the fridge to store until needed.
- Eat hot or cold!
