Tuna, Corn, and Cheese Hot Sandwiches (for cheat days and cravings)

I just had to add a recipe in here which was just a teeny, tiny bit naughty. After all, a cheat meal here and there is not going to ruin your weight loss! This recipe is still tasty and uses whole, real ingredients, but it’s quite bread and cheese-rich, so it’s definitely one to keep up your sleeve until you’re really craving some comfort food. Prepare the sandwiches the night/s before, then throw them on the grill or in the sandwich press before eating.

Serves: 4

Container: you will need 4 airtight containers

Time: approximately 15 minutes

Nutritional info per serving:

  • Calories: 380
  • Fat: 14 grams
  • Protein: 21 grams
  • Carbs: 36 grams

Ingredients:

  • 4 slices of cheddar cheese
  • 8 slices of wholegrain bread
  • 1 cup corn kernels, fresh or canned
  • 2 small cans of tuna (single-serve cans, half a can per sandwich)
  • Salt and pepper, to taste

Method:

  1. Place a slice of cheese onto 4 of your bread slices, top with corn kernels and tuna, sprinkle with salt and pepper then place the other slice of bread on top of each sandwich.
  2. Wrap in plastic wrap to keep the sandwiches together and place into your airtight containers.
  3. Store in the fridge until need, and place into a hot sandwich press to toast before eating!
