Stuffed Sweet Potatoes
By now you will have noticed that sweet potatoes are cropping up a LOT in this recipe book! But I think they are too good not to take advantage of. These sweet potatoes are stuffed with scallions, parsley, a little cottage cheese, and some baby spinach.
Serves: 4
Container: you will need 4 airtight containers
Time: approximately 20 minutes

- Carbs: 27 grams
Ingredients:
- 4 sweet potatoes, pricked all over with a fork
- 1 scallion, finely chopped
- Small handful of parsley, finely chopped
- 1 cup cottage cheese
- 1 cup baby spinach leaves
- Salt and pepper, to taste
Method:
- Place the sweet potatoes into the microwave and cook on HIGH for 1 minute increments until soft all the way through.
- Cut the sweet potatoes in half and remove the flesh and place it into a small bowl.
- Add the scallions, parsley, cottage cheese, spinach, salt and pepper, stir to combine.
- Re-fill the sweet potato skins with the filling and place 2 halves into each of your 4 containers.
- Place into the fridge to store until needed!
